Le Cirque, Las Vegas

Having been forcibly cancelled by Fleur de Lys I switched to Le Cirque at Bellagio, and what a great move. The room is exceptional with a beneath canvas effect and a stunning view of the Bellagio fountain show which is bound to occur during even the briefest of meals. I chose the three course fixe which began with an amuse from the kitchen (gazpacho). This was followed by a starter risotto which combined a perfect portion size with compellingly deep flavours. Brilliant.

Short rib was beautifully presented in a half dozen slices with bone marrow and a theatrical pouring of jus. I can't describe how delicious this dish was. Seriously in the very highest class.

Crepes Suzette was a hard choice: out of the eight or nine dessert choices not one sounded less than exciting. Ultimately I chose it because it's a long while since I had it; and I wad left with no regrets. Light and again, perfectly portioned.

Good espresso and a very reasonable bill for the quality of food: $123 before tip.

One quick word on the service: this is how it should be done. I dealt with four of the waiter/ sommelier staff and each was impeccably sharp and attentive. My half bottle of Tattinger was served just judiciously enough to see me through the meal and the tone changed from very formal to more relaxed as they got the measure of me. Impeccable.
