The Plumed Horse, Saratoga

I didn't start well disposed to this meal, having spent 10 minutes being ignored in the bar. However an imaginative pre-appetizer or two soon softened me, as did the charming company of Melanie and Mike. The Horse holds a Michelin star and the food is certainly of that quality. I started with a neat little souffle of uni and crab -- the sauce and fish served on the side and then spooned over the souffle. The dish was dreamy and creamy and just the right size. I had salmon to follow and found it to be very precisely cooked and pretty, if a little small. An excellent deconstructed banana split followed. This is a dish that I understand is a regular at the Horse and well deserves the status. The wine list is extensive and prices fair. Plus a trip to the stunning wine room completes a night of excellent, well timed service (in the dining room at least). Overall highly recommended for an 'occasion' -the dining room and bar are both lovely to be in - though there are restaurants with slightly better food in the same price bracket within too close proximity to make it my top Valley pick.
